Vineyard: 40 year old moflete trained Palomino fino vines. The vineyard is Pago de Carrascal and from the famous El Corregidor estate.

Viticulture: All work is done by hand. Harvest consists of many passes through the vineyard starting in August through September to pick grapes and different stages of ripeness. The first pass is for green harvest and that wine is used to correct the rest of the wines. The second pass is for Muelle, the third for Palmas, the fourth for Cortados and the fifth for Rayas.
Vinification: 80% of the wine is fermented in stainless steel tanks and the other 20% is quickly sundried and fermented in sherry casks.
Aging: The wines fermented in cask is racked in December and then blended with the stainless steel wine and aged together on the lees in tanks for 6 months.
Notes: "El Muelle de Olaso" is a wharf along the beach in Sanlucar where Luis Perez Sr. used to play when he was a kid. Today it is a famous area for seaside restaurants.
